Fuzzy's pudding cake

In honor of Fuzzy's upcoming birthday I decided to share his favorite cake. Which is a supped up beefed up cake mix...(I mean I USED to make homemade things, but when you work full-time, who has time for that?)

Now, Fuz isn't a big fan of frosting so keep reading for his frosting secret.

Take your favorite cake mix.

Add two extra eggs. Large ones.

Use melted butter instead of oil. Real butter, not the margarine stuff..which I read somewhere is only one molecule away from plastic..let that sink in for a minute. yum. Plastic.

Use milk instead of water.

Add one cup of sour cream. Or just guess...a couple large serving spoonfuls is great!

Mix and bake until the toothpick comes out clean. Should be about the same time as the box says.

Non-Frosting.

So remember I told you Fuz doesn't like frosting??

So I use.... PUDDING!

Get a larger box of your favorite flavored instant pudding mix. Wait till the cake is cool, then mix up the pudding and pour over the cake while it is still runny. Store in the fridge.

Pudding gives it a sweet finish without being too sweet.

Some of his favorite combinations are chocolate pudding with chocolate cake. Lemon cake with vanilla pudding and chocolate cake with lemon pudding. Get creative!

Stay tuned for a different post about Fuz's favorite cream cheese frosting. The trick....is you can get away with a lot less sugar than recipes call for as well a few other tricks we use.
